Soul Food Recipes From The Caribbean, Yummy


Soul food recipes come from the earliest inhabitants of the Caribbean islands. They were the three Indian tribes of Arawak, Carib, and Taino. Their daily food comprised of vegetables and fruits. It was the Taino tribe that first started cooking meat and fish, using large clay vessels.

 The Arawaks used a different method. They used thin strips of green wood to cook meat more slowly and allowing it to absorb the flavor of the wood. The wooden grate they used was called barbacoa. This is where the term barbeque comes from.

 Not to be left behind, the Carib tribe made their fish and meat recipes really spicy by adding pepper sauces, lime, and lemons. In fact, the Caribs are credited with having cooked the first pepper pot stew. The last of the above three has had a tremendous impact on Caribbean food.

 This should not be surprising because the Caribbean Sea was named after this tribe. Caribbean soul food recipes are still representative of the food that was originally eaten by the early inhabitants. It includes okra, fish cakes, callaloo, ackee, salt fish, pudding, souse, cassava, yams, sweet potatoes, plantains, and mangoes. The concept of jerk cooking also originated in the Caribbean. Early African hunters would often leave their homes to go on long hunts.

They would take with them pork cooked in a very spicy recipe over hot coals. In the post slavery era, Indian cooking culture was introduced into Caribbean soul food recipes and still remains an active part of the Caribbean cuisine. Chinese and is now a staple. The Chinese also unleashed mustard on the islanders while the Portuguese sailors did the codfish. Most of the fruit trees that are familiar to the visitors to the island were actually brought here by the Spainish.

 This included orange, ginger, lime, figs, plantains, sugar cane, tamarinds, grapes, and coconuts. America brought with it the various beans, squash, corn, tomatoes, potatoes, and chili pepper. In fact, some of these foods spread to the rest of world through the Caribbean.

 Caribbean cuisine is truly a mix of several cooking styles from all over the world. It retains much of the original culinary skills of the islands native inhabitants. Keep the chocolate wrapped in foil or plastic and store it away from anything with a strong smell, as it absorbs odors easily.

If you are out of bread crumbs you can try these simple substitutions in your recipe: cracker crumbs, matzo, crushed cornflakes, grounds oats, or even potato chips. Simply substitute an equal amount of the replacement food for the bread crumbs. You can also make fresh bread crumbs by finely chopping four slices of bread per cup you need.

Don't forget to clean your grill before you use it by scrubbing the grilling surface with a wire brush while it heats up. This way the removed food and grease burn off. Built up food on the grill doesn't add flavor to the meat, but make the fresh food stick to the metal much easier.

How To Cook The Best Food Possible

If you are making a dish where you will need thin strips of meat (fajitas, Chinese) freeze your meet for about 20 minutes before cutting. This will allow you to slice the meat very thinly with ease. You may think this sounds a little strange, but it will definitely do the trick.

To get perfectly cooked salmon that is not too dry, remove it from the heat when the fish is opaque and it flakes whenever you press gently with the back of a fork or spoon. Salmon dries out quickly and is easy to overcook; and because it stays pink, color is not an accurate indication of whether or not it is done.

Your cake can be ruined if the baking powder is too old. In most cases, you don't remember when you bought the box you have just found in the cupboard. Don't gamble with it, test it. Put one tablespoon of baking powder in one third cup of water. If it fizzes, it's good to use. If not, throw it away and buy a new box because what you have is too old.

To discover when oil is really hot enough and ready for the food, look to its' surface. If it is no longer completely smooth and appears to be shimmering it is hot enough. When oil is allowed to over-heat it actually starts breaking down and releasing unpleasant compounds and will begin to smoke, so know when to say when!

Never wash chicken or other poultry. Washing it with water doesn't eliminate the bacteria; washing merely spreads the bacteria around to your sink, utensils, and counter top. To kill any bacteria in the chicken and ensure that it is safe to eat, cook it to an internal temperature of 165 degrees Fahrenheit.

When it comes to meat, remember that cheap and tough definitely pay off in terms of flavor, with a bit of time and patience. Pork shoulder and chuck roasts are prime examples of meats that benefit from slow braising (cooking in liquid), which results in tender, delicious meat to serve with roasted veggies and gravy or to shred for BBQ sandwiches or tacos.

If you find yourself with part of a loaf of stale bread, don't throw it away or feed it to the birds. Instead, turn it into croutons for a soup or salad by tossing cubes of bread with oil and seasonings and baking them until crispy. You can also turn stale bread into breadcrumbs for many recipes.

A granite surface is great for thawing frozen foods, usually taking less than half of the time necessary for typical counter top thawing because granite absorbs the cold (and heat) of items placed on top of it so granite literally "sucks out" the cold from your frozen foods. Granite is also an amazing surface for pastry preparation when dusted with a little flour. If you can't afford to redo your kitchen in granite, check out a granite dealer for scrap pieces or have a smaller piece cut and polished for a fraction of the cost of remodeling your kitchen.

If you are making a sauce and you need to sweeten the flavor of it you can used mashed carrots or unsweetened applesauce instead of adding sugar. This is especially helpful for diabetics or anyone else that is trying to moderate the amount of sugar in their daily diets.

Try mixing course sea salt with a little bit of olive oil for added flavor instead of regular seasonings on your lettuce. Combine it with vinaigrette and you'll have a great tasting dinner salad or a nicely dressed lunchtime treat. The mixture will stay crunchy and stable on your crisp greens.

Cooking the daily meal can seem like a chore sometimes and throwing ingredients together quickly becomes tiresome. Cooking for pleasure can be relaxing, entertaining, and can be delicious. Remind yourself of some of the basic rules of cooking and make cooking fun again for you and your family.

No matter what kind of cheese you may have in your refrigerator, be sure that air cannot enter it by wrapping it tightly. Air contributes to mold growth on cheese. If your cheese does happen to have a little bit of mold on it, you can still use it by just cutting off the part with mold.

When you are cooking with cheese, be sure to bring the cheese to room temperature before you melt it. Also, always melt cheese using a very low level of heat. This will prevent the cheese from getting tough or separating into oil and liquid. Overheating cheese will denature its proteins.

Do not flip your food too often. Flipping not only affects the sear on a piece of meat, but it can cause delicate foods to break and may cause the breading to slip off of pan-fried foods. Wait until the food slips easily off the pan or the food is halfway through its cooking time so that you only need to flip it once.

When cutting up apples for a fruit tray or lunch box, place the slices in a bowl of lemon-lime soda, ginger ale or pineapple juice to soak for 5 minutes or so. Any of these drinks will prevent the apples from turning that unappealing brown shade, and they won't drastically alter the flavor of your apple slices.

Cook your pasta one minute less than the package suggests, then finish cooking it in a pan with sauce. Your pasta will absorb more of the flavor of the sauce without having an over cooked texture. This can be a quick and effective way to prepare a pasta meal.

Choose cuts of meat when roasting. Large rib roasts or tenderloin can be terribly expensive. When roasting meat, consider buying a cut of meat instead. It will save you a lot of money. Legs of lamb, turkey breasts, even pork shoulder are all capable of being just as delicious while being far more affordable.

Couples cooking classes can help you explore new cuisines, enjoy each others company and also learn more about working together in the kitchen. A well-kept secret is that the guys enjoy these classes as much as the ladies " and it often leads to the fellows taking a greater role in cooking at home.
